I'm so excited to share this recipe! I love coconut flavored EVERYTHING - so when I stumbled upon this healthy spin on fish tacos I couldn't wait to try it out! Changed a few things and it came out great! My girlfriends loved it, and it was just as good the next day over salad! Here is my updated recipe: INGREDIENTS: 2 lbs cod Dry mixture: 3/4 c shredded coconut 1/2 c panko breadcrumbs 1 tsp cumin 1/2 tsp garlic powder 1/2 tsp chili powder Pineapple mango salsa DIRECTIONS: Pat Cod filets dry. Squeeze lime over filets. In a separate bowl, combine dry ingredients. Coat dry mixture over cod filets. Bake in oven for 15 minutes at 350 F. Broil for 3 minutes to make crispy. Serve with store-bought Pineapple Mango salsa and a homemade Cabbage Slaw! *IT WAS JUST AS DELICIOUS THE NEXT DAY OVER SALAD!
