3 FISH RECIPES TO TRY DURING LENT

LENT IS THE TIME TO ABSTAIN FROM MEAT ON FRIDAYS - WHICH MEANS - FISH FRIDAYS! It is a great time to introduce more seafood into your & Your family's diet. There are so many wonderful seafood dishes - here are 3 fish recipes to try during lent: 

There are so many benefits to eating more seafood. Aside from ALL THE HEALTH BENEFITS of incorporating seafood into your diet (next post) there is an amazing variety - from salmon to mahi to shrimp, you can make easy fish tacos, DIY sushi or poke bowls, shrimp scampi, jambalaya, and so much more! Now is the perfect time to reach out to your local Fish Monger and ask what's good! Try something new and bring more seafood into your home. It will keep your kitchen skills up and get you out of your recipe rut, plus it will keep your family interested!
Okay enough about all this- let's get to the SEAFOOD RECIPES TO TRY DURING LENT! 

panko & parm crusted cod

*Works great with any firm white fish. Try Cod, Haddock, Corvina, Halibut, Hake or Turbot. 
INGREDIENTS
1 lb Cod
3/4 cup panko seasoning
3/4 cup grated parmesan
1 1/2 tsp dried parsley
1 tsp red chili flakes
1/4 cup mayonnaise
1 lemon juiced
Salt & pepper to taste
RECIPE
  1. Preheat oven to 375 F
  2. In a large mixing bowl mix mayo with lemon juice. Whisk until fully incorporated.
  3. On a large baking sheet combine all dry ingredients.
  4. Carefully lather the cod fillet with a light layer of the lemon mayo mixture.
  5. After coating fish in the lemon mayo mixture place on baking sheet, and coat all sides with the dry ingredients.
  6. Place cod on greased baking sheet and cook for 15-18 minutes.

blackened haddock

INGREDIENTS
1 lb Haddock
1 tsp onion powder
1 tsp paprika
1 tsp garlic powder
½ tsp black pepper
½ tsp cayenne pepper
2 tablespoons butter cubed into small pieces
RECIPE
  1. Set oven rack about 6 inches from the heat source and preheat the broiler.
  2. Line a baking sheet with aluminum foil and spray with cooking spray.
  3. Arrange haddock fillets on the prepared baking sheet.
  4. Mix all dry ingredients in a small bowl; sprinkle seasoning over haddock. Place pieces of butter on top of haddock.  
  5. Broil in the preheated oven until fish is easily flaked with a fork, 6 to 8 minutes. ​Serve with lemon wedges.​

herb stuffed bronzino

INGREDIENTS
1 Bronzino 
​
2 tbsp fresh parsley, chopped
½ a lemon sliced thinly
1 tablespoon lemon juice
3 garlic cloves, chopped
Salt and pepper to taste
RECIPE
  1. In a bowl, mix parsley, lemon juice, chopped garlic, and salt and pepper.
  2. ​Rub the inside cavity of the Bronzino with herb mixture and stuff lemon slices inside cavity.
  3. Bake at 375 for 10 minutes (whole) or 8 minutes (butterflied)
  4. Flip fish and cook for another 10 minutes (whole) or 8 minutes (butterflied)

SALMON WITH DILL BUTTER

Salmon with dill butter

ingredients

  • 1 lb salmon filet
  • 2 tsp dill
  • 1tbsp minced garlic

recipe

  1. Preheat oven 350 F
  2. Melt butter in pan on medium heat
  3. Add garlic and saute until golden brown
  4. Add dill and stir for a few moments
  5. Drizzle dill butter over top of salmon
  6. Bake salmon in preheated oven for 20 minutes, or until salmon is easily flaked with a fork.
